槟城卤肉 Penang Loh Bak

Main Ingredients

瘦猪肉 Lean pork - 2.4 公斤 kg
沙葛 Pang Kuan (Jicama) - 0.6 ~ 1 公斤 kg
大葱 Onion - 3 粒 tubes
绿豆粉 Mung bean flour - 8 汤匙 soup spoons
木薯粉 Tapioca flour - 4 大匙 tablespoons

五香粉 Allspice - 10 ~15 克 gm

胡椒粉 Pepper powder - 6 茶匙 teaspoons 

糖 Sugar - 3 大匙 tablespoons

盐 Salt - 8 茶匙 teaspoons 

味精 Ajinomoto - 1 茶匙 teaspoon

麻油 Sesame oil - 8 大匙 tablespoons

Sauce

番茄酱 Ketchup - 300 克 gm

酸梅酱 Plum sauce - 150 克 gm

温水 Warm water - 50 克 gm

麻油 Sesame oil - 1 茶匙 teaspoon

贡糖 Peanut Puffs - 10 块 pieces

炒芝麻 Fried Sesame - 50 克 gm

槟城阿杂 Penang Acar

A) Wet Ingredients

青瓜 Cucumber - 1.8 公斤 kg
红萝卜 Carrot - 0.6 公斤 kg
包菜 Cabbage - 1.2 公斤 kg
黄梨 Pineapple - 1 粒

醋 Vinegar - 1 瓶 bottle
水 Water - 2.5 瓶 bottles

醋和水煮沸，熄火。将所有菜科放进捞两分钟。
Cook vinegar and water until it is boiled. Turn off the flame. Rinse wet ingredients in the concoction for 2 minutes.

B) Dry Ingredients 

小葱 Shallot - 300 克 gm
黄姜 Turmeric - 2 small pieces
石头仔 Buah Keras - 80 克 gm
辣椒干 Dried Chilli - 100克 gm

合在一起搅碎。
Grind all dry ingredients.

C) Others

盐 Salt - 50 克 gm
糖 Sugar - 100 克 gm
炒芝麻 Fried Sesame - 200 克 gm
炒花生 Fried Peanuts - 300 克 gm
贡糖 Peanut Puffs - 10 块 pieces

Directions

A + B - 炒，加盐糖。
Fry A + B, and add salt sugar.
